Meat Filling:

  1. To a large bowl, combine the Pork Mince, 1 Onion, 120g Breadcrumbs, Parmesan Cheese, 1.5 teaspoons of Salt & Pepper, and Eggs.
  2. Knead everything to well combine.
  3. Cook your lasagne sheets in a pot of boiling water with 2-3 tablespoons of oil and 2 teaspoons of salt.
  4. Remove the lasagne sheets from the water once al-dente and separate each sheet. [Don’t stack or lump them together.]
  5. Once done, heat up a pan with oil of your choice.
  6. Meanwhile, shape the minced meat into balls roughly the size of a ping pong ball.
  7. Sear each side of the meatball to ensure that the outside is cooked.
[They don’t have to be fully cooked as it will still be baked later. ]

Red Sauce:

  1. Add the other remaining diced onion to a pan that has been oiled [1 tbsp] and heated.
  2. Add in 1/2 tbsp salt and mix well.
  3. Once done, add in your red wine, and let it reduce for a short while.
  4. Thereafter, add in your chopped tomatoes, passata & 1/2 tbsp pepper.
  5. Mix well, cover with a lid and let the mixture simmer until it bubbles.
  6. Once a thick consistency forms, remove from heat and set aside.

White Sauce:

  1. Melt your butter in a pan.
  2. Add in the flour once done and mix well. [It will look like clumps so don’t worry.]
  3. Slowly incorporate the milk into the mixture while stirring.
  4. This will form a thick consistency, then add-in 1/2 tbsp salt and mix well.
  5. Once done, remove from heat.

Lasagna Assembly:

Layer Overview: [ Lasagne sheet → Meatballs → Red Sauce → White Sauce → Cheese ]

  1. To a large dish that can withstand high heat, lay down your lasagne sheets as the base.
  2. Split all your cooked meatballs into 2 batches and place one batch above the lasagne sheet base.
  3. Add a layer of red sauce to cover the meatballs.
  4. Go over the red sauce with a layer of white sauce.
  5. Once the White Sauce Blanket is done, add some shredded mozzarella cheese/ sliced cheese over the top. [Optional but preferred for the cheesy goodness!]
  6. Start over again with the layering process:
    [ Lasagne sheet → Meatballs → Red Sauce → White Sauce → Cheese ]
  7. Add a final layer of lasagne sheets over the White Sauce.
